Chayote Squash Soup Broth

Stock pot full of steamy and subtly savory squash soup


  • 4 Chayote Squash
  • 4 Carrots
  • 2 Honey Dates
  • 1 Pound Pork Bones
  • 1 Tablespoon Goji Berries


  1. Add pork bones into a large pot and enough water to cover the bones.
  2. Bring the water to a rolling boil for 10-15 minutes.
  3. Meanwhile, peel carrots and cut into small chunks.
  4. Cut chayote squash down the middle lengthwise. Remove the seed, and then cut into quarters. Set aside.
  5. Drain and rinse pork bones under running water to get rid of any scum. Blanching and rinsing the bones keeps the broth clear rather than murky.
  6. Add clean pork bones, and all ingredients except goji berries into a large pot. Fill the whole pot with water.
  7. Boil on high heat for the first hour, turning to medium heat for another hour. Add goji berries and boil for another 15 minutes and it's finished!
