Chayote Squash Soup Broth

Ingredients
- 4 Chayote Squash
- 4 Carrots
- 2 Honey Dates
- 1 Pound Pork Bones
- 1 Tablespoon Goji Berries
Directions
- Add pork bones into a large pot and enough water to cover the bones.
- Bring the water to a rolling boil for 10-15 minutes.
- Meanwhile, peel carrots and cut into small chunks.
- Cut chayote squash down the middle lengthwise. Remove the seed, and then cut into quarters. Set aside.
- Drain and rinse pork bones under running water to get rid of any scum. Blanching and rinsing the bones keeps the broth clear rather than murky.
- Add clean pork bones, and all ingredients except goji berries into a large pot. Fill the whole pot with water.
- Boil on high heat for the first hour, turning to medium heat for another hour. Add goji berries and boil for another 15 minutes and it's finished!
