  1. Thinly slice the shallot lengthwise.
  2. Heat up a pan on medium heat with 1 tsp of olive oil and saute the shallots until fragrant.
  3. Add 1/2 cup of sake and bring to a boil.
  4. Then, add 3 tbsp of soy sauce, 4 tbsp of mirin, 1/2 tsp of dashi powder, and 1/2 cup of water.
  5. Add the thinly sliced pork belly, spreading apart the pieces with chopsticks or a fork so they don’t stick together.
  6. Crack an egg into a bowl and slightly whisk. Pour the whisked egg onto the pork belly.
  7. Continue simmering for a few minutes until the meat is cooked.
  8. Serve with sauce over white rice. Top with pickled ginger and green onions.
