Butadon (Japanese Pork Rice Bowl)

Ingredients
- 1 lb thinly sliced pork belly (cut into small pieces)
- 1 egg
- 1 shallot
- 1/2 cup of sake
- 4 tbsp mirin
- 3 tbsp soy sauce
- 1/2 tsp dashi powder
- 1/2 cup of water
- Cooked white rice
- Beni shoga (red pickled ginger)
- Sliced green onions

Directions
- Thinly slice the shallot lengthwise.
- Heat up a pan on medium heat with 1 tsp of olive oil and saute the shallots until fragrant.
- Add 1/2 cup of sake and bring to a boil.
- Then, add 3 tbsp of soy sauce, 4 tbsp of mirin, 1/2 tsp of dashi powder, and 1/2 cup of water.
- Add the thinly sliced pork belly, spreading apart the pieces with chopsticks or a fork so they don’t stick together.
- Crack an egg into a bowl and slightly whisk. Pour the whisked egg onto the pork belly.
- Continue simmering for a few minutes until the meat is cooked.
- Serve with sauce over white rice. Top with pickled ginger and green onions.
